Ingredients

  • ½ pound Lean Ground Turkey
  • 1 cup Onion, diced
  • 1 cup Carrots, diced
  • ¾ cup Celery, thinly sliced
  • 3 cups Water
  • 2 cups peeled Sweet Potato, diced
  • 2- 14.5 ounce cans No Salt Added Whole Tomatoes, chopped (save the juice)
  • 1-15 ounce can Great Northern Beans, rinsed and drained
  • 1 teaspoon French Pantry Herb Blend (choose your favorite)
  • ½ teaspoon Coarsely Ground White or Black Pepper
  • ¼ teaspoon French Pantry Sel Gris Salt
  • 8 cups Spinach, coarsely chopped
  • Grated Parmesan Cheese (optional)

Directions

  1. Combine Meat, Onion, Carrots and Celery in a pan over medium-high heat
  2. Sauté mixture for 7 minutes, stirring to separate the meat particles, until browned
  3. Add Water and all remaining ingredients, except the Spinach
  4. Bring to a boil
  5. Cover and reduce heat to a simmer for 30 minutes, or until Vegetables are tender
  6. Stir in Spinach and cook an additional 2 minutes
  7. Scoop into bowls and top with Grated Parmesan Cheese
